A natural and plant-based dairy preservative

Canadian startup Chinova Bioworks, has launched two new natural plant-based preservatives for the dairy and alternative dairy industry.  These new preservatives are produced based on a technology using an extract from White Button mushrooms – chitosan – to target and destroy the microorganisms that cause certain foods to spoil.

Chiber, the new natural preservative, should replace the artificial preservatives currently used by manufacturers such as cultured dextrose, natamycin, nisin and artificial substances like sorbates.  In addition to being harmful, these preservatives are expensive to produce. Chiber does not affect the taste of dairy products. It protects against a broad spectrum of microorganisms meaning it can be used in a wide range of products including cottage cheese, yogurt, butter, and cream cheese as well as in plant-based milk alternatives derived from almond, cashew, or coconut. Chinova is thus riding the trend for plant-based milks.
