Nasonville Dairy, a historic company, produces 150,000 pounds of cheese a day, but it is whey that supports its profitability. Demand for whey protein powders has skyrocketed, reaching 48 million pounds produced in May 2023, changing the economics of the dairy industry. Small dairy farmers in Wisconsin, like Nasonville Dairy, can’t compete with the big plants on the West Coast, but focus on specialty products to stay competitive. The price of whey has protected farmers from drastic declines in income, amounting to up to 10% of their monthly income.
