The outbreak of the covide-19 epidemic in U.S. slaughterhouses resulted in the destruction of 7 million hogs during this quarter. That’s nearly 500 million kilograms of meat lost. Some Minnesota farms even use shredders to crush the carcasses for fertilizer. Rendering plants process hogs into everything from gelatin to sausage casings. Also in Minnesota, 2,000 hogs are composted every day. Thousands of American farmers are impacted; some anticipate losses by slaughtering their hogs. U.S. hog production will fall for the first time since 2014. The order given to slaughterhouse workers to return to work is not fully followed: absenteeism is still high. The result of the pandemic was not long in coming: wholesale pork prices have doubled since April.
